Default RAM Ram 4x2 or 2x4

What's better, 4 sticks @ 2gb each, or 2 sticks @ 4gb each?

Assuming the 4 sticks have the same technical specs as the 2 sticks (minus the size of course), there shouldn't be a difference in speed. I know when it comes down to using one large stick vs 2, the latter option will slightly pull ahead in performance due to the use of dual channel technology.

AFAIK, if you have all 4 slots filled, you are still in dual channel. It's just 2 x dual channel.

using (4) sticks of ram adds additional stress to the memory controller. I recommend going with a 2x4GB setup.

What series or RipJaws? They're all good, but the latest X series have a bit better RAM spreaders.
