Two questions...
I've been researching a Gigabyte GA-Z68MA-D2H-B3, which supports up to 32gb of memory and these modules http://download.gigabyte.us/FileList/Memory/mb_memory_ga-z68ma-d2h-b3.pdf. Cross referencing their part number I can only find as big as 8gb.
1. Is it as easy as purchasing two sets of these 8gb (2x4gb) modules to get more than 8gb? and,
2. If the mobo only has 4 dimm sockets, how can it possibly support 32gb with only these modules??

Yes, that'll get you up to 16GB.

You can buy single 8GB sticks, however they're fairly expensive. They're not on the official list because there's very limited demand for them outside of servers so they haven't been officially tested with that specific board (that's what that list is - there are thousands more RAM sets that will work perfectly than those on that list).
