Which parts of my pc should I replace next?

CPU: AMD Phenom II 965
GPU: EVGA GTX 670 FTW w/ 4GB VRAM
MoBo: Gigabyte something for like $60
PSU: Corsair 650W Modular
HDD: Seagate 500GB 7200RPM
Case: NZXT Gamma Classic
Keyboard: Corsair K70
Mouse: Corsair M90
Monitor: Dell S2240 21.5"

How much performance will I gain from an i5 3570k and an Asus Sabertooth?
Depends on the application. For games, not too much. You would only see a boost in games that depend on only one core.

And also how do I transfer the important stuff to the ssd?
You can use a HDD clone utility but when you use your SSD as a main OS it's best to do a fresh install. You get the best out of it.

Would the addition of PCI 3.0 speed up my gfx card at all. I have seen people with the same card and a better cpu perform much better in games.

PCI-E bandwidth isn't an issue if your card is in a 2.0 16x bus.

So your aim is gaming, what games in particular? You also never mentioned how much RAM you have, what type it is, or your OS.

Just to put it bluntly, in gaming there is hardly a difference between my i5 750 and 3960x. If you're running 4GB of RAM you need to bump up to 8. If you have a ton of programs running in the background, close them all out.

RAM: Corsair Vengeance 16GB 1600
OS: Windows 7 Home Premium

Most noticeable is GTA IV. I get about 40fps but have seen 60-70 with different CPUs. No excess program's.
