Ok I have complete and utter knowledge of how to build a computer but I am extremely hard pressed with my knowledge of which hardware to find. Hopefully you could help me.

What I am aiming for: Business Computer and some Graphics Modeling (Sculpting, I DO NOT need a good graphics card).
What I need:
Hard drive-1TB
Case-Strictly not caring for aesthetics. All I want is efficiency.
RAM-Over 4gig preferably
Processor-Quad Core or better preferrably
Graphics Card-The cheapest you can find. Absolute budget
Optical Drive-Whatever
Motherboard-Don't know about these, can have built in graphics card (built in sound card and ethernet card is a must)
Monitor-Another grey zone
Keyboard-I really don't mind. Preferably light touches

Could this be done for under $1000?

Here's my setup so far (I did this for $600 roughly, please update this or help me update it, or scrap it and make a wholly better one!)

For example:

Newegg.com - Antec Three Hundred Illusion Black Steel ATX Mid Tower Computer Case - Computer Cases

Looking for pure efficiency, not aesthetics, if I were then I would get a mac

Newegg.com - Seagate Barracuda 7200.12 ST31000528AS 1TB 7200 RPM 32MB Cache SATA 3.0Gb/s 3.5" Internal Hard Drive -Bare Drive

Cheapest 1TB hard drive I could find

Newegg.com - Computer Parts, PC Components, Laptop Computers, Digital Cameras and more!

Now this I am very confused about. Is that 40$ more really worth a quad-core (I think that is the only difference).

Newegg.com - G.SKILL 4GB (2 x 2GB) 240-Pin DDR2 SDRAM DDR2 800 (PC2 6400) Dual Channel Kit Desktop Memory Model F2-6400CL5D-4GBPQ - Desktop Memory
Is it worth getting those extra 2 sticks? It would nearly make it 100$ more! Why can't I just get 2 sets of these 2x2gigs?

Newegg.com - Antec earthwatts EA500 500W Continuous Power ATX12V v2.0 SLI Certified CrossFire Ready 80 PLUS Certified Active PFC "Compatible with Core i7/Core i5" Power Supply - Power Supplies

Newegg.com - Antec earthwatts EA500 500W Continuous Power ATX12V v2.0 SLI Certified CrossFire Ready 80 PLUS Certified Active PFC "Compatible with Core i7/Core i5" Power Supply - Power Supplies

Newegg.com - SAMSUNG Black 22X DVD+R 8X DVD+RW 16X DVD+R DL 22X DVD-R 6X DVD-RW 12X DVD-RAM 16X DVD-ROM 48X CD-R 32X CD-RW 48X CD-ROM 2MB Cache IDE 22X DVD±R DVD Burner - CD / DVD Burners

Sorry I am actually UK based (london) but I have seen that prices on US websites are much cheaper when comparing the currency rate, and hopefully shipping won't be too much. Am I right?

You have two power supply links.
Other than that it looks ok.

Yes a quad core is worth it over duals now, prices have really come down.

newegg doesn't ship outside of US and Canada :(

might wanna try to look on EBuyer.com or overclockers.co.uk

1 thing I wanted to add is...... try to look for motherboard that use DDR3 instead of DDR2

prices are similar, so why not go with faster one? ;P
