It's nice, but not that necessary. The fans that I have seen that do this, the RPM change is very unnoticeable. If you have Cool n' Quiet (or SpeedStep) enabled, that should do more than enough, and you can have your case fans at a constant RPM.
However, if you fancy it, you can get variable fan controllers that YOU control with a knob, it's really nice for controlling noise.
