Dual Channel Ram Upgrading Question

I currently have 1GB of DDR PC2700, in the form of two 512 chips. There are two vacant slots remaining and I wish to upgrade to 1.5 GB.

Economically it would make more sense to buy one stick of 512, but I have read that RAM will function at its maximum potential if two sticks (two 256 chips) are installed in tandem.

If I were to purchase a single 512 stick and leave a slot vacant would I be limiting the performance of my RAM?
 
It doesn't really matter. It will run as fast as your slowest stick of ram. And you can only dual channel 2 identical sticks.

Well obviously he can add another stick later but as said above it will only run in single channel mode for now.
