How many PSUs are going to have multiple CPU connectors? I mean server ones might (will?), but even most desktop 1000W+ ones don't.

That's a good point. Sure, you can use an adapter for that but then you'll still run out of connectors

1 x 24 pin
2 x molex
14 x 6 pin (cards)
then what ever stuff you need for HDD/etc.

..just way too many connectors. Obviously it'll require more than 1 PSU anyway (highest I've ever seen is like 2000watt, so unless you're using low end cards you're gonna have to use 2 anyway you look at it)...
