Word Processor ( what do you use )

For Mac you want to look at NeoOffice, it is the OS X Port of Open Office, since it installs natively (no fink required)! Has all the same features as OpenOffice just a different format since its a self contained executable for all the parts (Word Processing, Spreadsheet etc) Of Course its free :)

Office 2008 is also pretty good, they put a lot of graphical elements in it (silly Microsoft, trying to keep up with Steve Jobs) and so the program will run slowly on a machine with less than 2 or 4 gigs of ram, there doesnt seem to be a good way to skirt around that!

The latest version of OpenOffice has a native port for Mac OS X, and the Mac port has always been self-contained as you describe NeoOffice.
