Would this be possible?

I have a wireless router in my room where I have my main PC. I also have a PC in the other room with a wireless NIC. Everything works fine.

My question is, if I install a WIRED NIC into the PC with the wirlees NIC ( so the pc will have 2 nics, 1 wired, 1 wireless) and I hook up another pc or a xbox via a ethernet cable to the wired nic, will it be online?

Yes, it will work... you will need a CROSSOVER cable to connect the device to the NIC card.... ALSO, you will have to enable internet connection sharing on the PC with the wireless and wired NIC cards.
