Start with Beryl, and then find nice Emerald and GTK themes.

GNOME-Look is a good place for finding themes.

I've been asking a similar question to the linx admins at work - most use Gnome, and also recommended Enlightenment for eye candy.

Ugh. It makes me want to puke.

And yeah, Beryl/Compiz is the way to go. Beryl is prettier, and Compiz is more functional, so take your pick.

I've been told the newest version of enlightenment is nice... but then again, i'm just repeating what i heard, since i was asking the same question.
