Should I use the game default setting, like a 1024 resolution, or use the resolution my monitor recommends (1680x1050)? When I have it on the recommended resolution, the refresh rate goes up to 60, but when it's on the game's default resolution, it goes up to 75. Is it best to use a certain setting, or just do it the way I like it?

Its usually better go run at your monitor's native resolution, so the 1680x1050 would look better as its proportionate to what the monitor will display.
