I know of one mouse that has 5 buttons It's got the main to then a scroll and 2 on the site. My highschool has them and I believe they are logitech but I'm not sure. Just to narrow down your search it was an optical mouse.

If you can't find that your best bet is a Joy stick because voice regonition software is expense and the free stuff just isn't very good.

Ever considered using her feet? Buying pedals to compensate for a couple/few buttons?

I have never really seen anything that would help, maybe write to Logitech? No doubt they have something that will work that just isn't retail.
