Office 2007 / 2010 User Acceptance of Ribbon UI?

Many ppl are not comfortable with changing to the new versions of Office because of the Ribbon. They know they will become frustrated when they look for something and cannot find it. How does IT overcome this?
 
Generally they overcome it with training session. 'This feature is now here', etc.
 
We have a flash site on our intranet that allows you to choose a function in office 2003 and then flash will show you a movie on where that feature is in 2007. I think this is an awesome feature.

How do you overcome it? You really can't overcome it, you cope with it and try to train your employees and help desk analysts to assist your employees. Train them before you roll out 2007, retrain them once they get the new software, setup either a help line or train your help desk analysts to help employees and finally put some material out there so the semi-savvy users can help themselves.
