How do you track work in an IT department? in our case the dept is small. no more than 5 users supporting roughly 350 end users.

options include

send emails in outlook

setup ticketing software

use project planner software

meet regularly and let employees track it
 
Ticketing software which i believe is considered best practice in ITIL.

We use Service Desk Plus. In the past i've used IssueTrack
