Video format conversion help

I've got some videos on my hard drive that are in .mkv format. I'm trying to convert them to something that I can then use Nero to burn to a DVD, but everything I use turns out looking like crap. Pixelated and the colors are changed. I've tried avi's using different codecs, xvid, dvix, all look like crap. Is there a program that will convert this with out making it look crappy, or a codec that would preserve the quailty better?
 
matroska container, hmm, well depends on the bitrate/quality of the source........if it doesnt have much headroom it wont matter what you use to convert it, it will just get worse with each conversion
 
I've tried using g-spot to figure out what format the source video is in and all that other info about it, but its not telling me anything except that its an mkv container.
