There is evidence to suggest that 2 6600GT's in SLi can outperform a Nvidia 6800GT, much to my chagrin, since I bought one. However, please make sure your motherboard supports this. The 6600GT is a nice card, fine for playing those games.

Two 6600GT's do beat a single 6800GT in some things.
I would recommend that you rather get a 6800GT as it would work out cheaper and would have almost the same performance as 2 6600GT's.
If you do decide to go for 2 6600GT's make sure your motherboard supports SLI so you can link them up together.
