Default Data Logging and Generating

Ok, here is my trouble. I need to know what hardware/software I need to accomplish being able to hook up to 4 individual data streams and log them simutaniously in timing relation to each other. I then need to be able to generate the logged information so I can simulate that particular situation and reintroduce these data streams in place of the origional.

Does anyone know anything about doing this?

Any information will be a help.

I know I can get data loggers but I also need to generate an artificial stream that is a perfect copy.

would seem this needs to be in the "hardware" or "software" section
