I recently bought a 1 gig PC 3200 stick of Ultra for my Dell Dimension 3000 (yes, it's sad). The motherboard has 2 DIMMs that were previously used by 2 sticks of PC 3200 Samsung 256. The manual says that mixing non-identical sticks of RAM can reduce performance, and I want to know if I should get rid of the remaining 256 stick and leave the 2nd DIMM open. Thanks in advance.

You just won't be able to use dual-channel, that's all. Your performance will still be better with the 1gb stick.
