I would get the 3700+ and OC.

Get a single 74GB (new 16MB cache) and their enterprise version of the 250GB for storage.

I agree, you can save alot of money just by overclocking. Telling you from experience 160gb will go fast. Skip out on the expensive raid setup and get more space. Accessing you hard a few milliseconds faster isnt that important.
