I have a chess game on my comp and I found the .wav files for the different game sounds. I'd like to take the sounds and replace them with my own sound bytes. I tried removing the original sound from the folder and then replacing it with a different wave file with the same name, that didn't work.

Is there anything I can do to customize my game a bit?

Is that just a matter of opening the file and retyping the words?
What program would I use to open them? Notepad?

no you need a .mix or .snd editor. i know red alert 2 MIX files can be edited with XCC utilities. maybe XCC can edit your files, it has a complex interface so read the manual. search XCC editor...... oh well i found it for you:
