Can you do a dual raid setup?

I was just curious, how flexible are RAID setups? Like, could I get four 250gb hard drives, and set up a raid0 format with the two sets of drives, and then with the two "500gb hard drives" set up a raid1, so they mirror one another?

Or is raid1 and raid0 STRICTLY between TWO drives and that's it...?

RAID 5 or RAID 0+1 will essentially do what you want. RAID 0+1 is exactly what you are asking for, but you may be better off with a RAID 5 array.
