What do you guys think? When you get an email from a prospective employer, and they say:

Best Regards,
Bob

Should I respond back saying "Hi Bob," or "Dear Mr. [Last name]".

it depends on what they want..
do you know his last name?

if you do, respond back by saying: "dear mr. ..."
dont forget that he is an employer, not one of your friends. you have to try to act professional.

Yeah, I do know his last name. This is his second email actually.

In the first email he sent, he signed with his full name signature (company signature). I replied with, "Dear Mr. Schiller,". In his response to that email, he just signed it with "Regards, Bob". And I need to send another email.

So what do u think?

yeah he's not going to be ofended if you use his last name. But he might if you use his first

Cool cool. Email sent. Until he tells me otherwise, I guess it should be the last name.

I think it doesn't matter that much. I mostly start with "Dear Mr. XXX," then after a couple of emails I reply with "Dear Bob,".
If they start sending me mail with "Hi," or "Hello," or "Dear Frans," I always reply with "Dear Bob,".
