Dude, I have a 3200 and there is no bottlenecking. I run all games except BF2 (and that's a RAM issue) on highest settings with no hiccups, and I havn't even overclocked yet. If you've got the money you might as well go with the GTX.
Yeah...some people have created this myth that unless you have an FX-55 or some crap a high end GPU will be "bottlenecked"
While it is true that fatser CPUs give higher framerates the difference is like 5-10 which really isn't a lot and not noticable in real world performance
Another option you may wanna consider is an x1800 card, you could get the XL and overclock it to XT speeds and beyond which would give roughly a 7800GTX performance in games
The 7800GT can run anything out smooth like butter though
