i have a evga geforce 6800 and just wondering if this is good or bad.

just being at the desktop i get 55 degrees GPU core
and
41 degrees Ambient Temp.

when i am playing a game they usually raise by 5-10 degrees depending how long i have them on.
 
That sounds about right, you probably have better airflow in your case than I have. I have the same card and it idles at 60-63C and gaming gets around 80C. It was up around 90C during games but I ordered the copper heatsink upgrade that eVGA offers and moved some stuff around in my case to get better airflow. If I remember correctly GPU cores can handle higher temps than CPU cores so once your in the 90s with the GPU then you have to worry. Also, if you don't have it yet I recommend downloading RivaTuner which will graph out your GPU temps while you game instead of exiting the game and checking nVidia's temp gauge since doing the latter takes time that your card will cool off.
