I am planning on running this at 2.6Ghz - 2.7Ghz. I am confident that the stock cooling will be enough however I will probably upgrade that eventually as well. Should I go with this setup or keep what I have and wait a bit longer?

Spend the extra $50 and get the AMD 3200+ venice.
The 10X multiplier helps out a bit. You can check it on Overclockers.com cpu database.

The 3000+ and 3200+ are the same core, just speedbinned differently, therefore a 3000+ and 3200+ of the same week and stepping numbers will overclock about the same. Save your money and get the 3000+

The nf3-d is kind of ehhh right now, it's a good board, but it needs a bios revision that fixes a bunch of bugs. You also risk getting a board with a resistor which "shouldn't be there" according to DFI, I don't know when they started shipping the boards that don't have that resistor, but it causes a problem with voltage stability. I'd still say it's better than the Neo2 though
