Vertical sync will cap your framerate at your refresh rate. If your monitor has a refresh rate of 100hz, then your framerate will not exceed 100hz.
However, my reason for turning on vsync is not to protect monitors but just to avoid excess usage. There is absolutely no reason to run anything above 70 fps when you can't even see the difference. All you are doing is making your computer work harder for no reason. Turning on vsync will save that extra load to process frames that are virtually impossible to display.
