How do I? with Adobe Illustrator

I have designed some logos by hand. How can I scan these, put them into Adobe Illustrator and then re-colour them and edit them. I can scan them and insert them into the programme but I don't know how to edit them. At the moment Adobe thinks my logo is one scanned object. How can I smooth the edges, crop bits, recolour, basically turn this hand drawn pic into an electronic version.

No they're not, because I live in New Zealand and don't have the money or time to get books in. This is rather urgent.
