different ways of writing to the disk for one, TAO(track at once), DAO(disk at once), and different filesystems on the disk itself, for example a VCD isnt an iso9660 file format but most drives can read and write that way in DAO mode

edit:

even a music CD format is different than an iso9660 data format or VCD format, it makes a difference when it comes to the total amount of actual data you can put on the disk itself, some filesystems take up more space leaving less space for the actual data
 
and ya,techinically it shouldnt matter what format is written, and with some little tricks you can write all kinds of formats on a CD, for example I can build an ext2 filesystem and put it on a CD, windows wont be able to read it, but POSIX compliant OS's would
