Can I change the boot select screen to give me more time to choose between what OS I want to boot?

yep, check grub.conf file if using that, or lilo.conf file if using lilo

It took me a couple minutes to figure out how to edit it, but now that I know how I'll probably be customizing everything.

Would entering 0 turn the auto select off?

0 is plain text mode I believe, there's some vga codes you can put in there, goto /usr/doc and look up the lilo or grub docs
