Glad I didnt buy my new GPU yet

Well yea thats assumable... but to manage heat output as best I can I might try to wait for a hybrid 1080ti. That way when i put the 980 in my stream box for encoding i might be adding a little less than another 980 to my total heat output between the two boxes lol.

Does anyone know of any products for desktops that work like the apc datacenter cooling systems but on a smaller scale?

I would seriously consider a product like that if the price was right.
 
Make a waterloop that dumps the heat somewhere else. If you got cash get an aquarium chiller, PerformancePCs has them with adapters and attachments.

But between the two boxes you'll have more heat than 2 980s. The water cooler just helps dissipate heat quicker into the air, it doesn't change the amount of heat the chip outputs, and the 1080ti will put out more heat than a 980.
