What type of fan or fans should I get?

That graphics card is a top of line gaming graphics card. Not needed at all for your build.

When considering monitors, I will be getting dual 22-24 inch screens, which would you recommend?

Asus, Samsung, NEC, or Dell screens.

The stocks ones are plenty.

Ok cool, now I know there is a lot of unnecessary stuff in prebuilt desktops, if I wanted to put another HDD for storage there would be plenty of room?

Yea like I was saying, you could swap that 1TB out for a 2,3, or 4TB drive for your VMs or RAID 0 a couple of 1 or 2TB drives.

Ok. I'd probably have to go with a 2TB since the Raid 0 would only give me half of that for storage. You've been a lot of help, thank you again!

Multiples or whatever you like for a storage solution. I'm not a fan of RAID at all, but IMO if you're doing a lot of VM work you will want either seperate SSDs for each VM or at least a RAID 0 setup for the speed increase.
