Is it possible to create different multiple screen displays with multiple projectors yet connected to just one pc?

Yes it is possible.

You will have to set each one up as a separate screen. Most graphics cards (for desktops) allow for two screens/outputs, plus there are splitters and USB to VGA/DVI/HDMI adapters.
