is this because you have to "complete" the color slots in order to access the different channels?

kinda. for that mobo, it says to run them in tri-channel, either all the green slots need to be filled or all slots need to be filled.

but you can still run ram in dual channel, it just says to put the ram in the 4 slots closest to the cpu (dimm 2 and 1, 4 and 3)

you can crossfire it with a normal edition

SLi is for nVidia cards only

the GTX 285 is slower than the HD 5870, and does not support DX11

Go with the XFX one, both have reference coolers, don't see why the sapphire is $50 more.
