When running Ubuntu as my main OS, along with virtual machines (XP, Windows 7, and Ubuntu Karmic (9.10 beta, not released yet)), I still have decent performance on my computer.
With that said though we don't know what the future holds. So we don't know what type of RAM usages we will see in the near future. I agree 12 GB would definately keep you set for the life of that computer, and by the time you may need to use 12 GB you will probably be replacing the computer anyways.
