I am also considering Windows 7 as my operating system. So it's either that or Home Premium.
What brand of 4870 would you reccomend and why?

P.S. I already ordered the RAM and CPU cooler.

Do you do a lot of overclocking? A P45 chipset would be your best bet if you do, and a step up from that Q6600. That DFI board is kinda lame anyways because it only supports DDR2 800.

Either of these would do the trick:
Newegg.com - BIOSTAR TForce TP45HP LGA 775 Intel P45 ATX Intel Motherboard - Intel Motherboards

Newegg.com - GIGABYTE GA-EP45-UD3P LGA 775 Intel P45 ATX Intel Motherboard - Intel Motherboards

Newegg.com - ASUS P5Q-E LGA 775 Intel P45 ATX Intel Motherboard - Intel Motherboards

Then pair it with one of these:
Newegg.com - Intel Core 2 Quad Q9550 Yorkfield 2.83GHz 12MB L2 Cache LGA 775 95W Quad-Core Processor - Processors - Desktops

Or a Q9400 if too expensive.

I've never overcloecked before but I do plan on overclocking with this build. Which of the boards would be the best? And is that Q9550 better than Q6600? Better overclocking? And last but not least, which 4870's should I get?

Also keep in mind that I have already purchased my RAM listed above in my first post, along with that CPU Cooler. Will the CPU cooler still be compatible with that Q9550? And what about the RAM with the P45 boards?

Yup, the memory and cpu cooler will be compatible with everything. The Q9550 is a lot faster and will overclock better compared to the Q6600. If you can afford it, I say go for it, you'll get a better bang for your buck. And that Biostar TP45 I listed is a high quality overclocker, that would be my choice.

This one seems alright:
Newegg.com - SAPPHIRE 100251SR Radeon HD 4870 X2 2GB 512-bit (256-bit x 2) GDDR5 PCI Express 2.0 x16 HDCP Ready CrossFire Supported Video Card - Desktop Graphics / Video Cards

You should get this power supply instead:
Newegg.com - CORSAIR CMPSU-650TX 650W ATX12V / EPS12V SLI Ready CrossFire Ready 80 PLUS Certified Active PFC Compatible with Core i7 Power Supply - Power Supplies
It has better quality compared to the Xigmatek you listed, because of it's single 12v rail. Plus it's cheaper.

Will that power supply be enough if i plan to upgrade things? Say my RAM and other things?

So that 4870 is just ok? Or is it a real popular one, that performs well?

Is it easy to overclock that Biostar? What makes it better than the one I had chosen? Besides the RAM holdback?

Yes, that power supply will be enough power for your system as well as other upgrades. That 4870x2 should perform well, they run a little hot and are power hungry though.

I've used a Biostar motherboard before and they have nice features wthin the bios for overclocking and such. Its been proven that P45 chipsets are better at overclocking compared to X48 chipsets. They generally reach further clock speeds, with great stability.

With that 4870x2, is there a way it won't get so hot? And what do you mean by power hungry?

Which is better though? That Biostar or Gigabyte? Because the Gigabyte is x3 Award Winner.
