Physically the ram is there.

Out of SLI, the cores can address 896MB of ram each, but they wont work together ( so it makes each pcb having the ram pointless ironically) but it still needs to be there for SLI to work properly.

In SLI, theres a total of 1792mb of ram, but they can only address 896mb. The second core just assists the first one.

I can get more technical but basically its just mirroring the 896mb.
 
SLI puts the same information into each bank of memory. so 4 banks of 896 vs 3 banks of 1024. Also, tri-sli scales quite well on x58.
 
4gpu scaling seems to be pretty craptacular from both camps. Also the sandwich cards from nvidia are usually just a 2-3 month stopgap to take control of the lead again. Also, the 285s have come down 30 bucks on newegg already :) Soon as they hit the 300 dollar mark, i'm all over it.
 
Actually quad sli drivers have matured very much, it even works in windows xp with the GTX 295.

Scaling has improved since the last gen, i average a good 45-70 fps in crysis and warhead on max settings, and quad-sli almost doubles that (115fps).
