If I have XP on one hard drive and Vista on another, is there a way I can specify which boots?
 
There are programs out there that will enable you to do this. Do you have both set up already. If so it should give you the option upon bootup.
 
Google for EasyBCD. That will allow you to add a XP entry to the Vista bootloader and dual boot correctly.
 
You will also need to copy the ntldr, ntdetect.com, and boot.in files to the boot drive assuming that is the Vista drive. Those are a mandate otherwise the entries would be no good.
