i will not be overclocking too much or at all really. I don't really know exactly how to OC but people say its easy.
I think I might go with the gt first and maybe buy another gt for sli in a couple months since someone said 2 gt beats an ultra?

2 GT's will beat an Ultra...but usually in gaming they are **** near close to each other...i say get 2 GT's simply because of price.

there is no reason to spend big money on a video card right now...we are in teh middle of a transition phase between series

Um my old 7900GS on stock cooling had 22% increase in performance through overclocking. I believe my 8800GT had around a 14 or 15% increase from stock.

performance increase is pretty subjective.....performance increase in what 3dmark? Games and 3dmark aren't the same thing, I've had OC's where my 3dmark goes up a ton but only avg like 1 more fps in actual games plus run into heat problems so its bad advice just to always tell people to buy slower parts and oc them as this forum always does.
