Adding more Ram.

When add more RAM to a system does it have to be the same make of RAM thats already in there?

no it doesnt, as long as the ram is the same speed etc, brand does not matter but if possible try to get the same brand, but really i dont think there much advantage in matching the brand

If your doing a dual channel set-up, it's usually best if the brand is the same. The only way is to test it and see.

I have two sticks on my girlfriends computer of 256 will I have to replace them with a 512 stick if I wanted to add another 512 stick or could I leave them be and just add the 512 stick?

Also is it detremental to the HDD if you do to many reformats?

Sell or throw those 256 sticks in the closet and just get a 1 GB stick. Is it DDR 400?

It isn't that expensive. Then when you need 2 GB, you will be good to go.
