I removed the fan that came with the Tuniq right away because the reviews said people had problems with them. I just used an extra of my Apevia 120mm case fans. No fan controllers=no problems
To turn off fan control on the Gigabyte BIOS you have to go into PC Health Status (I think, it could be Motherboard Tweaker or something else) and there should be an option called SMARTFAN, set it to Disabled.
EIST is speedstepping, a powersaving feature that decreases your CPU's multiplier when it isn't being stressed... pretty sure it has nothing to do with the fan

The tuniq fan is pretty good, actually, pulls alot of air on 100%. It isn't necessary to have it on 100% though, just make sure it is actually running. The tuniq coolers have a relatively low fin density, so higher cfm fans don't make a huge amount of difference.
