I don't know why they haven't upgraded their ports.. Im guessing serial does the job fine..
inner workings of programmable controllers, barcode scanners or other industrial equipment are different to... maybe its not worth the trouble to upgrade the factories that produce the stuff, when its not going to change much.

Some anti-theft systems (burglar alarms) have Serial access terminals also..

lol...I noticed in some of the grocery stores i go to, the cashiers are using Dells and touch screen LCDs, instead of the ones that look like from the 80s.

Yeah they are using the newer systems.. but I noticed yesterday in the grocery store that the scanner's plug in with serial connectors. But then I've gone to convience stores and noticed the old school machine's... people still use them lol..
