Looking for RAM

I'm in the process of building my own computer and it seems that the last pieces I need are the RAM. The motherboard I purchased was a Gigabyte GA-M55S-S3 (rev. 2.0) NVIDIA® nForce 550 chipset. And my processor is an AMD 64 X2 5600+ dual core.

The motherboard says that it supports...

1. 4 DDR2 DIMM memory slots (supports up to 16GB memory)
2. Supports dual channel DDR2 800/667/533/400 DIMMs
3. Supports 1.8V DDR2 DIMMs

I've been searching all over the net for RAM with a high mhz around 667 and 800 while also keeping the CAS latency low, around 2-3. Every time I seem to get up to the 800mhz level though the latency increases, or the voltage increases. Does the fact that the motherboard says it supports 1.8v mean that it is the highest it can support.

I can't seem to figure out what is the best type of RAM I'm going for for gaming. High mhz but high latency, low latency but lower mhz, I can't seem to find any of the high mhz low latancy. Currently I'm looking at a Samsung 1GB DDR2 667MHZ PC2-5300 CL3 240 PIN DIMM 1.8v for $140 each.

Would it be better to go with an 800mhz stick with a CL of 5 or 4? Or should I stick with a 667mhz with a lower latency? It would be nice if there was some sort of graph for these types of memory.
